How to Make Leftover Lasagna Even More Awesome

The ultimate comfort food when it comes to anything carbs, lasagna will always have a special place in my heart. From vegetable, spinach or the good ole traditional, there’s nothing better than the layers of gooey cheese and sauce.

Kenji López-Alt, the Managing Culinary Direction from Serious Eats, tells us the best way to reheat lasagna to make it even better. Now before I tell you the tip, I must kindly disagree with the Kenji about leftover lasagna – I absolutely love it. In my experience, the flavors develop more and settle in—just like soup. Now I do agree lasagna is not the best in the microwave, that’s why I have always popped mine in the oven (or eat it cold, straight out of the refrigerator. Don’t judge me). But, there’s a better way than the oven of course…

Kenji got this clue from chef Mark Ladner from New York. According to Kenji, Ladner serves his famous lasagna the day after it's made, fries it up, and serves the dish at the restaurant, Del Posto.

It’s simple. Just slice your lasagna into thin slabs, pop some oil in a non-stick pan, and fry your lasagna over medium heat. The result? Ooey, gooey goodness with a crispy outside. Top off your new fried deliciousness with some sauce, and dinner is ready.

Leftover lasagna just went up a whole new level of awesome.

As some of the Serious Eats comments have alluded, you can apply the same leftover frying technique with your other casseroles; this is especially helpful with all of the Holidays coming up.
