How to Nuke Caramelized Onions in a Microwave

I love caramelized onions. They’re sweet, browned deliciousness is out of this world. With a little bit of crunch and whole lot of flavor, eat them on their own or incorporate ‘em in a creamy dish…they’re good anyway you wanna chow down on them. However, the hours upon hours on the stovetop doesn’t appeal to me, so I have yet to make my own. Until now.

Mr. Alton Brown over at AltonBrown.com, has come through again with his ingenious, scientific cleverness: nuke caramelized onions in your microwave. This for sure is a game changer here—and one that I will definitely give a try.

With 2 pounds worth of thinly sliced yellow onions and some salt to draw out the moisture, Mr. Brown nukes his covered onions in a glass dish on high-power for 10 minutes in the microwave. Afterwards, he drains off the liquid and adds in butter (you can easily substitute non-dairy butter in here), baking soda to help with browning and brown sugar to add more flavor. Brown nukes that concoction for another 15 minutes, but leaves it uncovered. He stirs it up yet again and pours out excess liquid. Then, he microwaves the soon-to-be-caramelized goodness another 20 minutes a few more times to get a dark, golden brown of caramelized goodness.

While this method does take over an hour, you don’t have to constantly baby it and frees up your time as well as another stovetop burner. Not bad, especially when it’s Alton Brown approved.
