Microwave 1-Minute Pancakes in Mason Jars

You can never go wrong with pancakes. Period. I can eat them in the morning like there’s no tomorrow, but my favorite meal of all time is having breakfast for dinner. Either way, if you’re in a rush or don’t feel like making a mess, but you’ve got a hankering for pancakes, the answer is simple: microwave ‘em.

You simply mix all of your ingredients together in a bowl, and pour the batter in mason jars. Since the batter rises, you’re good to fill up a mason jar anywhere from a third to half way up. Feel free to add fruit like blueberries or strawberries to your pancakes—just make sure they’re the first to go in your jar. Keep it lidless; small jars get nuked individually for one minute, and a large mason jar gets nuked for ninety seconds.

After you grab up your mason jar pancake from the microwave, pop a knife all the way into the bottom of the jar to make sure it’s done. Drown your pancake in syrup, and you’re good to have breakfast on the go.
