Between making soups, casseroles and other deliciousness, you’re bound to have some leftover vegetables. Instead of tossing your carrots, potatoes, zucchini and other veggies in your refrigerator crisper, store them properly in the freezer to reduce food prep, or better yet, reduce spoilage. The One Pot Chef has a convenient tip to help you store your food that is ready to go when you are. You’ll want to peel your vegetables, and then use a cheese grader (or food processor) to shred them. Pop your veg shreds in a Ziploc bag, and place your bag flat in the freezer. Not only are you reducing food waste, but your vegetables are already prepped for that next recipe of yours. Plus, by chopping up your veggies into smaller chunks, the defrosting process is much quicker. If you don’t plan on using your shredded vegetables anytime soon, consider using a freezer bag instead of a Ziploc, as freezer burn can occur.
