It sounds like the gas valve itself is stuck open and needs to be replaced.

But why does it immediately shut off the gas flow once I disconnect the live wire? Wouldn’t a faulty valve stay open even when it’s disconnected?

Turned out to be the valve started malfunctioning more consistently. Went back out was really obvious this time.
