how to put in defrost mode in fresh food ice room? ice room evaporator keeps icing up

What have you tried so far?
disassembled ice room, defrosted with steam, replaced defrost thermostat and fan motor, checked heater(okay), cleared drain system. front top of ice room is missing which is might be the cause(letting air in). I would like to be able to defrost the evaporator with out disassembling
