If my evaporator in my refrigerator is covered in ice and the defrost thermostat is closed, would it be alright to plug the unit back in and allow it to defrost on it’s own?

I suggest you shut the unit down 24 hours and let it defrost. You will need to determine what part is causing the unit to ice up. It could be your defrost timer, heater or thermostat
